Paul Carmichael grew up in Barbados, trained under Marcus Samuelsson at Aquavit, rose through the Momofuku group, and then moved to Australia to run Momofuku Seiōbo in Sydney — where he slowly evolved the menu towards his Caribbean roots and became close to a household name for it.
